Vanilla Apple Chai Cupcakes

Fall is upon us and I’m rolling up my sleeves so I can whip up some awesome fall recipes. First up are these Vanilla Apple Chai Cupcakes. I wanted to combine some of my favorite fall flavors, apples, apple cider, and chai lattes, into one perfect dessert. My go to fall drinks are soy chai lattes and apple cider (spiked and virgin) from mid-September to November.

Whenever I incorporate chai flavors in my recipes, I always make my own chai mix instead of using pre-mixed tea leaves. I’ve found that making my own mix results in stronger, spicier flavors. I will warn you that there are a couple of extra steps in order to assemble these cupcakes, but they’re totally worth it. I promise. Chai is infused in the cupcakes and the frosting, so you won’t miss it. But the big surprise is the apple filling. These little guys will make you want to wrap yourself in a warm blanket with a hot chai latte in one hand a cupcake in the other.

So, remember back in July when I made Sweet Pepper Honey Cornbread Muffins for a Summer BBQ themed virtual dinner party? Well, it’s happening again! This time the theme is Fall Harvest. I was in charge of dessert and I thought these Vanilla Apple Chai Cupcakes with Apple Chai Mascarpone Frosting would be the perfect finish for our dinner party menu. What do you think? Ingredients

    Chai Spice Mix
  • 1 tsp Ground Fennel
  • 3/4 tsp Ground Cloves
  • 2 tsp Ground Cardamom
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Nutmeg
  • 1/4 tsp Ground Black Pepper
  • Cupcake
  • 1 1/2 cups All-purpose Flour
  • 1 1/2 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 3/4 cup Granulated Sugar
  • 6 Tbs. Unsalted Butter, room temperature
  • 1 Whole Egg, room temperature
  • 1 Egg White, room temperature
  • 2 tsp. Vanilla Bean Paste
  • 3/4 cup Whole Milk
  • 1/4 cup Organic Apple Cider
  • 3 tsp. Chai Mix
  • Apple Filling
  • 3 cups Granny Smith Apples, peeled and finely diced
  • 4 tablespoons Unsalted Butter, room temperature & cubed
  • 2 teaspoons Cinnamon
  • 1 teaspoon Lemon Juice
  • 1/2 cup Organic Apple Cider
  • 2 tablespoons Brown Sugar
  • 3/4 tablespoons Cornstarch
  • Apple Chai Mascarpone Frosting
  • 2 (8 oz.) containers Mascarpone Cheese
  • 1 cup Heavy Whipping Cream
  • ¼ cup Granulated Sugar
  • 1 tsp. Vanilla Extract
  • 2 tsp Chai Mix
  • 2 tbsp Organic Apple Cider

Instructions

    Chai Mix
  1. Mix fennel, cloves, cardamom, ginger, cinnamon, nutmeg, and black pepper together in a small bowl. Set aside.
  2. Cupcakes
  3. Preheat an oven to 350°F. Line a standard 12-cup muffin pan with cupcake liners.
  4. In a bowl, whisk together the flour, baking powder, salt, and chai mix.
  5. In a large bowl, using an electric mixer, beat together the sugar and butter on medium-high speed until light and fluffy, 2 to 3 minutes. Reduce the speed to low and add the egg and egg white one at a time, beating well after each addition, then beat in the vanilla bean paste.
  6. Alternate beating in the flour mixture and milk--flour in first (3 additions) then the milk and cider (2 additions). Scrape down the sides after each addition and mix until fully combined.
  7. Fill each muffin tin until 3/4 full. Bake for 18-20 minutes until the tops turn golden brown and a toothpick test comes out clean. Cool in the pan on a wire rack for 5 minutes. Then transfer the cupcakes to the rack and cool completely for 1 hour.
  8. Apple Filling
  9. Combine the apples, cubed butter, cinnamon, lemon juice, apple cider, brown sugar, and cornstarch in a small saucepan over medium heat. Stir constantly until butter is melted and the ingredients are combined. The liquid will start to tighten up and pull away from the sides of the pan. Set aside to cool.
  10. Apple Chai Mascarpone Frosting
  11. In the bowl of a stand mixer fitted with the whisk attachment, combine mascarpone cheese, heavy whipping cream, granulated sugar, vanilla extract, chai mix, and apple cider.
  12. With mixing speed on low, begin to beat the mixture. Gradually turn the speed up until it reaches a medium-high speed. Beat mixture for 2-3 minutes until soft peaks begin to form (keep an eye on it while it is beating, you do not want the mixture to curdle).
  13. Assembly
  14. Cut 1-1.5" holes, about 3/4 of the way deep in the middle of your cupcakes and remove the excess cupcake to create a pocket for the apple filling.
  15. Fill each cupcake to the top with your apple filling.
  16. Frost cooled cupcakes as desired.
  17. Garnish with cinnamon sticks or star of anise, if desired.
