I have a confession: I don’t like mint. I rarely eat mints, chew gum, or partake in after dinner peppermints. It’s just not my thing. So you must be wondering why I have a Triple Chocolate Peppermint Cookie recipe today, right? Well, this is the only recipe I’ve ever liked with peppermint. Every year I try to use peppermint in at least one holiday recipe, and I’m never quite satisfied. But this year, I was successful! It might have something to do with all the chocolate in these cookies, but I’m really pleased with the balance of mint to chocolate ratio. There is a hint of mint in the actual cookie so all the mint lovers out there won’t be disappointed, but the semi-sweet and white chocolate chips will please all the chocolate lovers. It’s a win-win. I’m also excited about using peppermint as a festive garnish. If you happen to have peppermint candies that need crushing, feel free to go old school with your topping. If, however, you’re feeling a little lazy like me, you can purchase peppermint candy sprinkles at your local Target or grocery store—I won’t judge. Either way, these cookies will make your house smell AMAZING.

Lastly, a word of advice for those of you planning to bake these for Santa: Don’t forget to leave a glass of milk so he can wash down these decadent holiday cookies!

Ingredients

    Cookie
  • 1 1/4 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Ground Cloves
  • 1 cup Unsalted Butter, room temperature
  • 6 ounces Bittersweet Chocolate, finely chopped
  • 2 Large Eggs, room temperature
  • 1/2 cup Firmly Packed Light Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 teaspoons Mint or Peppermint extract
  • 6 ounces Semisweet Chocolate Chips
  • 6 ounces White Chocolate Chips
  • Topping
  • 1 cup White Chocolate Chips
  • 1/2 tablespoon Coconut Oil
  • Crushed Peppermint Sprinkles to garnish

Instructions

    Cookie
  1. Whisk the flour, baking powder, salt, baking soda, and cloves together in a medium bowl. Melt the butter in a saucepan over medium heat. Remove pan from the heat, add the bittersweet chocolate, then set aside until melted.
  2. Whisk the eggs, brown sugar, and mint (or peppermint) extract together in a medium bowl, then slowly whisk in chocolate. Stir in the flour mixture to make a loose dough. Don't overwork the dough.
  3. Fold in the chips. Cover with plastic wrap and refrigerate until firm, about 2 hours.
  4. Preheat oven to 350 degrees F (or 325 with convection).
  5. Line a baking sheet with parchment paper. Form dough into balls, about 2 inches or 1 1/2 ounces each, and put on the prepared baking sheets, leaving a couple inches between the cookies.
  6. Bake until outside is crackly, but the center is still moist, about 13 to 15 minutes, or 12 in convection.
  7. Remove the pan of cookies from the oven and cool on a wire rack for 15 minutes. Then place the cookies directly on the pan to cool another 15 minutes.
  8. Topping & Assembly
  9. Add the white chocolate chips and coconut oil to a microwave safe bowl and heat in 15 second intervals. Use a whisk to mix the chocolate and oil together after each interval until smooth.
  10. Use a spoon and drizzle the white chocolate over your cookies.
  11. Sprinkle the peppermint generously over your cookies. The white chocolate will catch the peppermint.
  12. Let the cookies sit for at least one hour or until the white chocolate drizzle has solidified.
