This week, you’re getting two recipes out of me—Strawberry Mimosa Cupcakes and my Red Bean and Strawberry Pinwheel Cookies. Double the holidays means double the sugar, and I’m not mad at that. Galentine’s Day AND Valentine’s Day are less than 2 weeks away! I don’t even know where the time went.

Truth be told, The Fiancé and I don’t really celebrate Valentine’s Day. But when I spotted these super cute Wilton XOXO Mini Icing Decorations at Target, placed conveniently next to red, pink, and white sprinkles, I totally caved. I started with the decorations before I had the recipe. And when it came down actually baking, I got nervous. I wasn’t sure what I would want to serve on Galentine’s Day or Valentine’s Day—but then it hit me: boozy Strawberry Mimosa Cupcakes, DUH!

Anyone who knows me will tell you that my favorite meal is brunch (with mimosas). And if you’re going to have a meal celebrating the guys and gals you love the most, it should definitely be a lazy, boozy brunch—the kind of brunch where people roll up in sweatpants or worn-in jeans, wearing their favorite t-shirt, sporting gigantic sunglasses. And after making your way through several waves of food coma, you finish the day with these Strawberry Mimosa Cupcakes. That, my friends, is a day. Am I right? At this point, you may be thinking, “This lady likes brunch too much…” or “This lady likes mimosas too much…she’s kind of strange.” That’s okay. You’re still going to love these cupcakes!

Ingredients

    Prosecco Cupcakes
  • 1/2 cup Unsalted Butter, softened
  • 1 1/4 cup Granulated Sugar
  • 1 2/3 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/8 teaspoon Kosher Salt
  • 2 Eggs, room temperature
  • 1 teaspoon Vanilla Bean Paste or Vanilla Extract
  • 2 cups Prosecco
  • 2 tablespoons Whole Milk
  • Strawberry Cream Cheese Frosting
  • 4 ounces Cream Cheese, softened
  • 1/2 cup Unsalted Butter, softened
  • 3 1/2 cups powdered sugar, sifted
  • 3 tablespoons Fresh Strawberry Puree

Instructions

    Prosecco Cupcake
  1. Preheat oven to 375°F. Line muffin tin with cupcake liners.
  2. Place the prosecco in a small saucepan over low-medium heat and cook down to half the volume. This isn't an exact science, so pour the heated prosecco back into your liquid measuring cup after about 7 minutes to see how much you have. You want to aim for about 3/4-1 cup after boiling.
  3. In a medium bowl, sift together flour, baking powder and salt. Set aside.
  4. In a stand mixer fitted with a paddle attachment, cream butter for 1 minute. Add sugar and cream together with butter for about 3 to 4 minutes.
  5. Add eggs, one at a time, scraping down after each addition.
  6. Add vanilla and mix until just combined.
  7. In a mixing bowl whisk together cooked down prosecco and milk. Alternatively add beer mixture and flour mixture to butter mixture until fully incorporated.
  8. Fill cupcake liners 2/3 full.
  9. Bake for 15 to 18 minutes until golden brown and a toothpick inserted in center comes out clean.
  10. Transfer cupcakes onto a cooling rack and allow to cool completely.
  11. Strawberry Cream Cheese Frosting and Assembly
  12. In a stand mixer, or with a hand mixer, cream together butter and cream cheese. With motor running add sugar, 1/2 cup at a time until all sugar has been added, scraping down sides of the bowl after each cup of sugar.
  13. Mix in the strawberry puree until fully incorporated.
  14. Pipe frosting onto cupcakes or spread with an offset spatula and top with sprinkles or fresh cut strawberries. But I mean, why would you not use sprinkles?

Notes

You can find the Wilton XOXO Mini Icing Decorations at Target and Amazon. The baking cups can be purchased through Simply Baked.

I used Prosecco for these cupcakes, but if you'd rather use champagne that will work just fine. Either way, it will be important to cook down your alcohol. Cooking it down will concentrate the flavor. DO NOT skip this step. Prosecco and champagne have very delicate flavor profiles and you don't want those flavors to get lost in your cupcake. That would be very, very sad.

If you prefer a brighter or more saturated pink color in your frosting, you can add a few drops of red food coloring when your mixing. Personally, I prefer the natural blush color that occurs with the strawberry jam, but to each their own.
