When I was a kid, I couldn’t have dreamed that you could improve upon the classic hot chocolate with a million marshmallows. But I was so wrong. RumChata Hot Chocolate with a million marshmallows (marshmallows are a constant must) is the freaking best—and I’ve made it into cookie form: RumChata Hot Chocolate Cookies.

If I had my way, I’d carry around a thermos of RumChata Hot Chocolate everywhere. However, decorum states that I probably shouldn’t be tipsy at work or while walking around the city. So a few weeks ago, when I was laying in bed, covered in with a million blankets, I had an epiphany—make the drink into a cookie! DUH. These RumChata Hot Chocolate Cookies are literally the drink in cookie form—complete with marshmallows and all! I’m not going to strain to pat myself on the back…but you’re welcome. And when you’re back home, you can go crazy with a RumChata Hot Chocolate drink AND cookie. Go crazy.

Ingredients

  • 1 cup Unsalted Butter, softened
  • 1 1/2 cups Granulated Sugar
  • 1 Large Egg, room temperature
  • 2 teaspoons Rum Extract
  • 2/3 cup RumChata
  • 2 3/4 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1 1/2 teaspoon Cream of Tartar
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/3 cup Dutch Cocoa Powder
  • 1 package Instant Chocolate Pudding
  • 2 cup Mini Marshmallows

Instructions

  1. In a large bowl or stand mixer, cream butter and sugar until fluffy. Add egg, rum extract, and RumChata. Mix until barely combined.
  2. In a medium bowl, stir together dry ingredients. Slowly incorporate dry ingredients into the batter, continuing to mix until there are no streaks.
  3. If your dough is overly sticky, dough may be chilled at this point for an hour or longer until ready to proceed. Chilled dough can often be much easier to work with.
  4. Preheat oven to 350 degrees F.
  5. Use an ice cream scoop to form dough balls. Space cookies 2" apart on cookie sheet, then use the palm of your hand to press down on the balls until they're about a 1/2" thick.
  6. Take small handfuls of the mini marshmallows and work them into the dough discs so there are some mini marshmallows in the middle and a decent number on the outside.
  7. Bake for 13-15 minutes. Pull out the cookies when they're slightly gooey and halfway baked. The marshmallows will be golden and slightly toasted
  8. Allow cookies to cool on pan for 1-2 minutes before transferring to a wire rack to cool completely. Store in an airtight container for up to a week.
  9. Remaining dough can be chilled for up to a week or frozen for several months. Always remember to label remaining dough well with name and instructions.
