A super simple recipe for a summery fruit topping that doesn’t require the stove top. This Roasted Strawberry Rhubarb Topping is great for ice cream, yogurt, and pastries.

Rhubarb is in season and I’m all sorts of happy about it. Plus, berry season is right around the corner so get ready for a million strawberry rhubarb recipes. I opted to roast the strawberries and rhubarb with some of my favorite baking ingredients: Grand Marnier, honey, and vanilla bean paste. This Roasted Strawberry Rhubarb Topping is so good that you’ll run out in the blink of an eye. It’s one of those toppings that you use and think, “Just one scoop…” And then four scoops later you’re almost out.  The good news is that it doesn’t take that much time or effort to make this so you can easily replenish your stocks.

Barbecues and picnics are just about to fill your summer calendar, so you should start prepping. If you double, triple, or even quadruple this batch, you can freeze the topping and pull it out when you need a quick dessert. Just thaw the frozen topping in your refrigerator overnight and serve it over a nice big scoop of vanilla ice cream. Doesn’t that sound like summer perfection? I’m such a sucker for easy recipes like this. I can’t wait until Summer officially begins!

Ingredients

  • 1 lb Rhubarb (about 4 stalks), cut into 1/4" pieces
  • 3 cups of Strawberries, hulled and cut in half
  • 1/4 cup Grand Marnier
  • 1/4 cup Honey
  • 1 tablespoon Vanilla Bean Paste
  • 2 tablespoons Brown Sugar
  • 1 1/2 tablespoons Cornstarch

Instructions

  1. Move an oven rack to the middle of the oven and preheat the oven to 350F. Also, line a rimmed baking tray with parchment paper and set aside.
  2. Toss the rhubarb, strawberries, Grand Marnier, honey, vanilla bean paste, brown sugar, and cornstarch in a bowl until the ingredients are fully distributed.
  3. Pour the ingredients onto the parchment lined baking sheet and bake for 35-40 minutes.
  4. Remove from the oven and cool on a wire rack for 30 minutes. Transfer the topping and juices to an airtight container.
