Remember when I made those Jumbo Raspberry Almond Muffins and I shared my feelings about meal prep with muffins? Well, think of this Roasted Strawberry Rhubarb Crumb Cake as my coffee cake version of meal prep.

This coffee cake is moist and sweet with a touch of tart from the rhubarb. You’ll need to make my Roasted Strawberry Rhubarb Topping beforehand, but this recipe is crazy simple. And who doesn’t love an easy recipe? ME (and probably you, too)! 

I love this crumb cake because it just taste likes comfort and home. The Fiancé and I had some really lovely mornings where we just had a slice of this coffee cake and a cup of coffee while watching the news. The best part about breakfast baked goods like these is that they help us take a moment to slow down and enjoy our mornings. I’m not really a morning person, so it’s nice to have bit of coffee cake as a reminder that mornings aren’t so bad after all. Roasted Strawberry Rhubarb Crumb Cake

Ingredients

    Streusel Topping
  • 1 1/2 cups All-purpose Flour
  • 1 cup Brown Sugar
  • 1 tablespoon Ground Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter, melted
  • 1 1/2 teaspoon Vanilla Extract
  • Cake
  • 2 cups All-purpose Flour
  • 3/4 cups Granulated Sugar
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Baking Powder
  • 1/4 Baking Soda
  • 1/2 cup Unsalted Butter, cubed
  • 3/4 cup Greek Yogurt
  • 1 large Egg, room temperature
  • 1 Egg Yolk, room temperature
  • 2 teaspoon Vanilla Bean Paste
  • Strawberry Rhubarb Topping
  • 1 cup Roasted Strawberry Rhubarb Topping
  • Confectioners Sugar for Dusting

Instructions

    Streusel Topping
  1. Whisk together the flour, brown sugar, cinnamon, and salt in a medium bowl.
  2. Mix the butter and vanilla into the flour mixture until it starts to form in clumps. Set aside.
  3. Cake and Assembly
  4. Preheat the oven to 325 F.
  5. Line a 9" square baking pan with parchment paper and set aside.
  6. In the bowl of a stand mixer fitted with a paddle, mix together the flour, granulated sugar, salt, baking powder, and baking soda on low until fully combined.
  7. Add the butter to the flour mixture, cube by cube while the mixer is on low until the mixture becomes crumbly.
  8. Add the greek yogurt, egg, and egg yolk and mix until just combined. Scrape down the sides as needed.
  9. Pour the batter into the lined baking pan. Drop the pan a from a few inches above onto a hard surface (table or counter) to release air pockets.
  10. Spread the Roasted Strawberry Rhubarb Topping over the batter.
  11. Scatter the crumble over the top of the cake, occasionally forming larger clumps with your hands to get varied textures. Gently pat the streusel into the top.
  12. Bake for 1 hour to 1 hour and 5 minutes or until the cake is golden brown and it starts to pull away from the sides.
  13. Cool the cake completely in the pan on a wire rack.
  14. Cut the cake into squares and dust with confectioners sugar.
