Matcha Dipped Tropical Lychee Popsicles for National Ice Cream Month!

I’m sharing these Matcha Dipped Tropical Lychee Popsicles because it’s the tail end of National Ice Cream Month and I’m finally posting my recipe. This was my first attempt at popsicles and I couldn’t be more excited.

I remember growing up when I would eat cold pineapple and lychee during the summer. My mom would put cans in the refrigerator over night and my sister and I would eat spoonfuls of the sweet, cold fruit straight from the can. These Matcha Dipped Tropical Lychee Popsicles have all the flavors of my childhood: matcha, coconut, pineapple, and lychee. If you’ve never had lychee before, it’s an asian fruit with a hard outer shell that must be peeled. Lychee is slightly sweet and perfectly complements the tropical flavors of coconut and pineapple—and who could say no to a combination like that? The best part about these popsicles is that they’re SO easy.

Ingredients

    Lychee Popsicles
  • 1 20 oz. Can of Lychee, drained
  • 3 tablespoons of Lychee syrup, from can
  • 1/2 cup of Crushed Pineapple
  • 1 can Coconut Milk
  • Matcha Dip
  • 1 1/2 cups of White Chocolate Chips
  • 2 tablespoons of Matcha Powder
  • 3 tablespoons of Coconut Oil

Instructions

    Lychee Popsicles
  1. Combine all ingredients in a food processor or blender and puree until smooth. Pour into popsicle mold (I used the Zoku Classic Popsicle mold). If you have extra left over, just store in an airtight container for later.
  2. Place molds into the freezer for at least 6 hours or overnight. In order to loosen the popsicles from the molds, run under warm water for 1 minute.
  3. Matcha Dip
  4. Place the white chocolate chips, matcha powder, and coconut oil in a microwave-safe bowl and heat in intervals of 15 seconds. Whisk until smooth. Quickly dip the popsicles in the matcha mixture and let dry.
