Oh, and your kitchen is going to smell like cinnamon heaven when you bake these. Win, win. Also, this recipe makes 24 cookie bars, so you’ll have enough for yourself and a some for your friends. These cookie bars will make you very popular. I haven’t done extensive studies on the correlation between these cookie bars and popularity, but I can speak from personal experience. Just saying.

Ingredients

    Maple Cinnamon and White Chocolate Chip Cookie
  • 1 cup Unsalted Butter, room temperature
  • 1/3 cup Pure Maple Syrup
  • 1/2 cup Light Brown Sugar
  • 1 cup Granulated Sugar
  • 2 tablespoons Ground Cinnamon
  • 3 Large Eggs, room temperature
  • 1 teaspoons Vanilla Bean Paste
  • 1/2 teaspoon Maple Syrup Extract
  • 3 cups All-purpose Flour
  • 3/4 teaspoon Baking Soda
  • 3/4 teaspoon Kosher Salt
  • 12 oz package of White Chocolate Chips
  • White Chocolate Drizzle
  • 1/2 cup White Chocolate Chips
  • 1/2 tablespoon Coconut Oil

Instructions

    Maple Cinnamon and White Chocolate Chip Cookie
  1. Preheat the oven to 350 F.
  2. Line a 9x13" pan with parchment paper and set aside.
  3. In a stand mixer, beat together butter, granulated sugar, brown sugar, cinnamon and maple syrup in a stand mixer on medium-high speed until light and fluffy
  4. Add eggs, vanilla bean paste, and maple extract and mix until fully combined.
  5. In a medium bowl mix flour, baking powder, baking soda, and salt.
  6. Mix the dry mixture into the batter on low until fully combined.
  7. Fold the white chocolate chips into the batter until fully incorporated.
  8. Transfer the cookie batter to the parchment-lined pan and press into the pan until evenly distributed.
  9. Bake on the middle rack for 16-18 minutes and then rotate the pan. Back for another 16-18 minutes until a toothpick inserted into the center comes out clean (about 35 to 40 minutes total).
  10. Cool in the pan on a wire rack until room temperature--about an hour.
  11. Once cooled, carefully pull the cookie block out of the pan and place on a cutting board (with the parchment paper). Cut into 2" squares.
  12. White Chocolate Drizzle and Assembly
  13. Place the white chocolate chips and coconut oil in a microwave-safe bowl and heat at 30 second intervals for 1-1.5 minutes.
  14. Stir the chocolate mixture after each 30 second interval until the texture is smooth.
  15. Drizzle the melted white chocolate over the 2" cookie squares (with parchment below) with a spoon.
