Ingredients

    Graham Cracker Crust Ingredients
  • 1 1/2 cup Graham Cracker Crumbs
  • 3 tablespoons Granulated Sugar
  • 6 tablespoon Unsalted Butter, melted
  • Filling Ingredients
  • 1 (8-ounce) package Cream Cheese, room temperature
  • 1 (8-ounce) container Mascarpone, room temperature
  • 1/4 cups Granulated Sugar
  • 2 teaspoon Vanilla Extract
  • 1 large Egg, room temperature
  • 2 tablespoons Matcha Powder

Instructions

    Graham Cracker Crust Directions
  1. Preheat the oven to 350 degrees F and line a 8x8 pan with foil leaving at least a 1.5-inch overhang.
  2. Finely grind the graham cracker crumbs, and sugar in a food processor.
  3. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan).
  4. Bake the crust until it is set and beginning to brown, about 5-7 minutes.
  5. Remove from the oven and cool.

  7. Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula.
  8. Beat in the vanilla and add the egg, beating just until blended after each addition.
  9. Pour batter over the graham cracker crust.
  10. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 30-35 minutes (the cake will become firm when it is cold).
  11. Transfer the cake to a rack; cool for 1 hour.
  12. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.
