We’ve got 14 days until Christmas, guys, and I’m counting down with these Easy Egg-free Gingersnap Cookie Dough Truffles! I’ve been battling a cold this week and it’s been the biggest drag. Not only have I felt crappy, but I’ve already fallen behind on my holiday baking schedule! Luckily, I’ve got a few easy holiday recipes up my sleeve—like these Easy Egg-free Gingersnap Cookie Dough Truffles!

I’ll be honest, I never ate cookie dough growing up. My mom never let me or my sister eat cookie dough because she was afraid the raw eggs would make us sick. As an adult, I understand this precaution, but as a kid, I always envied my friends who got to eat cookie dough when they were baking. Now that I’m an adult, I’ve discovered egg-free cookie dough and it’s awesome! These cookie dough truffles are the perfect treat for the holidays. They take a little extra time to make because you need to make sure you’re working with

They take a little extra time to make because you need to make sure you’re working with cold dough at all times, but they’re totally worth it. Since most of your time will be spent waiting, I suggest making these while you’re decorating your house or wrapping presents. You can set aside a day devoted to Christmas prep without feeling overwhelmed—that’s what I did. These truffles make for great Christmas presents, too!

Gingersnap Cookie Dough Truffles

Ingredients

    Cookie Dough
  • 1 1/4 cup All-purpose Flour
  • 1/2 teaspoon Ground Cinnamon
  • 2 teaspoons Ground Ginger
  • 1/4 teaspoon Allspice
  • 1/4 teaspoon Ground White Pepper
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Iodized Table Salt
  • 1/3 cup packed Light Brown Sugar
  • 1/3 cup Granulated Sugar
  • 1/4 cup Molasses
  • 6 tablespoons Unsalted Butter, room temperature
  • 2 tablespoons Plain Yogurt or Sour Cream
  • White Chocolate Shell
  • 1 cup White Chocolate Chips
  • 1 tablespoon Coconut Oil

Instructions

  1. Line a baking sheet with parchment paper.
  2. Whisk together the flour, cinnamon, allspice, white pepper, ginger, baking soda and salt in a medium bowl.
  3. Beat the brown sugar, granulated sugar, butter, molasses, and yogurt with an electric mixer on medium-high speed in a large bowl until fully combined.
  4. Add the flour mixture, and mix on low speed until well incorporated. (Turn off the mixer and use your hands to help combine if needed.)
  5. Transfer the dough to plastic wrap and chill for at least an hour so it's easier to scoop the dough.
  6. Scoop tablespoonfuls of the dough, and roll them into smooth balls.
  7. Put them on the prepared baking sheet, and refrigerate for at least 1 hour until fully chilled.
  8. Melt the white chocolate chips and coconut oil in a medium microwave-safe bowl in the microwave in 30-second increments, stirring in between, until the coating is smooth and thin.
  9. Drop the chilled balls into the coating, and roll them around with a fork to fully coat.
  10. Remove each truffle with the fork, letting any excess coating drip off, and return to the baking sheet. (If the coating begins to harden, microwave it for a few seconds to warm it up and thin it out.)
  11. Chill the truffles until the coating is completely set, about 1 hour. (The truffles can be refrigerated in an airtight container for up to 5 days.)
