This is one of my shortcut recipes and my secret ingredient is boxed cake mix. God bless cake mix—it makes everything so much easier when you have a packed schedule like me. One of my favorite ways to step up a recipe using cake mix, is to use whole milk instead of water for a richer flavor. When you make these cupcakes, nobody will know you used a cake mix. And as always, I won’t judge you one bit. The coconut and rum extracts will boost the flavor of these cupcakes so you won’t miss any of the awesome flavors. I brought some of these to work and one of my coworkers said the consistency of these cupcakes was “melt-in-your-mouth good.” Yeah. So if that isn’t enticing enough for you, I don’t know what is.

Ingredients

    Coconut Cupcakes
  • 1 box White Cake Mix
  • 1 box Jell-O Instant French Vanilla or Vanilla Pudding
  • 1 teaspoon Cinnamon
  • 3 Eggs, room temperature
  • 1/3 cup Vegetable Oil
  • 1 1/4 cup Whole Milk
  • 1 teaspoon Vanilla Bean Paste
  • 1 teaspoon Rum Extract
  • 1 tablespoons Coconut Extract
  • 1 cup Sweetened Coconut Flakes
  • RumChata Frosting
  • 1 cup of Sweetened Coconut Flakes
  • 1/2 cup Unsalted Butter, room temperature
  • 4oz Cream Cheese, room temperature
  • 3 tablespoons Heavy Whipping Cream, room temperature
  • 1 teaspoons Rum Extract
  • 3 tablespoon RumChata
  • 2 1/4 - 2 1/2 cups Powdered Sugar

Instructions

    Coconut Cupcake
  1. Move your oven rack to the middle of the oven and preheat the oven to 350 F.
  2. Line a muffin tin with cupcake liners and set aside.
  3. In a stand mixer bowl, combine all ingredients except for the coconut flakes.
  4. Mix at medium speed until the batter is smooth. Periodically scrape down the sides of the bowl for full incorporation of the ingredients.
  5. Add the coconut flakes and mix on low until the flakes are evenly distributed.
  6. Fill each cupcake liner 1/2-2/3 full with an ice cream scoop. DO NOT over fill or the batter will overflow during the baking process.
  7. Bake the cupcakes for 18-20 minutes until the tops become golden yellow and a toothpick test comes out clean. Keep the oven on after you finish baking the cupcakes.
  8. Cool on a wire rack until room temperature and set them aside until you are ready to frost.
  9. RumChata Cream Frosting and Assembly
  10. Line a jelly pan with foil and pour the coconut flakes over the tray. Spread the flakes with your hands and shake the pan so they are spread out.
  11. Place the pan in the oven and toast the coconut flakes for 4-5 minutes. Keep an eye on your coconut flakes to make sure they don't burn.
  12. In the bowl of a stand mixer, cream the butter, cream cheese, heavy whipping cream, rum extract and RumChata together and fluffy and smooth.
  13. Add the powdered sugar a 1/4 cup at a time, mixing at medium speed, until the frosting starts to form stiff peaks.
  14. Frost your cupcakes as desired. Sprinkle the toasted coconut over the tops and enjoy!
