Creamy Strawberry Lychee Popsicles

It’s been pretty hot here in Chicago, so naturally, I’ve got ice cream on my mind. Last week it was all about my Baskin-Robbins-inspired Jamoca Almond Fudge Cupcakes, and this week I’m throwing it back to my two favorite summer fruits: strawberries and lychee. These Creamy Strawberry Lychee Popsicles are a cinch to make and taste better than any ice cream popsicles you could ever buy at a grocery store. I can always tell when a recipe will be a tried and true winner when my husband gives his seal of approval. And guess what? He loved these Creamy Strawberry Lychee Popsicles! Every time we entertain, he cooks and I make dessert—it’s kind of our thing. But when summer rolls around, I try resist turning on the oven for prolonged periods of time. So these popsicles are perfect for summer entertaining. (Fair warning, these will disappear in a heartbeat, so double up the recipe!)

I have fond memories of eating chilled fresh strawberries and canned lychee as a kid. Don’t get me wrong, I love fresh lychee, as well, but there’s something magical about chilled cans of lychee. We used to go to the Chinese market to stock up on cans of lychee in syrup, stick them in the fridge, then snack on them after school. I hold this memory so dear that last year I even created Matcha-dipped Tropical Lychee Popsicles. If you’ve never had lychee, it almost has the texture of a grape and it has a light, sweet flavor that perfectly complements strawberries. So as you can imagine, these Creamy Strawberry Lychee Popsicles have the perfect balance of flavor. Pro tip: When I blend the fruit in the food processor, I like to keep a few tiny pieces in the ice cream mix to give the popsicles a great texture.

Creamy Strawberry Lychee Popsicles

Ingredients

    Lychee Ice Cream
  • 6 ounces of Lychee (canned or fresh)
  • 7 ounces of Sweetened Condensed Milk (half of a 14 oz can)
  • 1/3 cup Whole Greek Yogurt
  • Pinch of salt
  • Strawberry Ice Cream
  • 6 ounces of Strawberries, fresh
  • 7 ounces of Sweetened Condensed Milk (half of a 14 oz can)
  • 1/3 cup Whole Greek Yogurt
  • Pinch of salt

Instructions

    Lychee Ice Cream
  1. Put the lychee in a food processor and pulse until fully processed. You can leave a few small chunks for texture.
  2. Transfer the processed lychee to a medium bowl with the sweetened condensed milk, yogurt, and salt and whisk until smooth and fully combined. Set aside.
  3. Stawberry Ice Cream
  4. Put the strawberries in a food processor and pulse until fully processed. You can leave a few small chunks for texture.
  5. Transfer the processed strawberries to a medium bowl with the sweetened condensed milk, yogurt, and salt and whisk until smooth and fully combined. Set aside.
  6. Assembly
  7. Fill six popsicle molds half full with the strawberry mixture.
  8. Then fill up the other half of each popsicle mold with the lychee mixture.
  9. Freeze for 5-6 hours or until completely frozen.
  10. Dip in lukewarm water for 10 seconds to release each popsicle from the molds.
