So, It’s the tail end of National Ice Cream Month and I’m finally posting my recipe. This was my first attempt at popsicles and I couldn’t be more excited. I remember growing up when I would eat cold pineapple and lychee during the summer. My mom would put cans in the refrigerator over night and my sister and I would eat spoonfuls of the sweet, cold fruit straight from the can. These Matcha Dipped Tropical Lychee Popsicles have all the flavors of my childhood: matcha, coconut, pineapple, and lychee. If you’ve never had lychee before, it’s an asian fruit with a hard outer shell that must be peeled. Lychee is slightly sweet and perfectly complements the tropical flavors of coconut and pineapple—and who could say no to a combination like that? The best part about these popsicles is that they’re SO easy.
