Remember when you were a kid and a trip to Baskin-Robbins was the best thing ever? Who am I kidding? It’s still pretty great. I used to be addicted to Jamoca Almond Fudge. And now that summer is in full swing, I find myself craving ice cream and reminiscing about trips to Baskin-Robbins. So I
Spring in Chicago has been a little unpredictable this year, but I’m going to keep baking like it’s warm outside. For instance, these Lemon Ricotta Poppy Seed Cupcakes with Blueberry Frosting are a combination of all my favorite Spring flavors. Lemons and blueberries are like peanut butter and jelly—simply meant to be. The little bit of ricotta gives the cupcakes a slightly rich taste that takes these cupcakes to the next level. So if you’re looking for a sweet distraction from the slightly cold weather, pick up some lemons and blueberries and bake up a storm!
If you love red bean like me, these Vanilla Red Bean Mochi Cupcakes are right up your alley. These cupcakes are really simple to make and they’re gluten free! Whaaaat? You’re probably wondering if you’re reading the same blog, but you’re in the right place–I promise. I’ve never dabbled in gluten free recipes because I’ve never needed to eat gluten free. It’s just a coincidence that I love mochi and it happens to be made with rice flour which is gluten free. Yay! These cupcakes are perfectly unassuming with a secret red bean surprise inside. These cupcakes are rich with vanilla and they are moist and chewy from the mochi. Also, they’re not overly sweet like regular cupcakes. I love that I can come home after a long day, throw these guys in the oven, and have the perfect little dessert in no time. Don’t hesitate to give this recipe a test run–you won’t regret it!
You know what makes everyone happy? Boozy cupcakes. Maybe that’s just me…either way, I love them. These Easy Coconut RumChata Cupcakes make me so happy because they’re super easy to make and they’re perfectly light and moist. Also, RumChata makes everything better. Just try my RumChata Hot Chocolate Cookies and Chocolate RumChata Glazed Banana Doughnuts. This is one of my shortcut recipes and my secret ingredient is boxed cake mix. God bless cake mix—it makes everything so much easier when you have a packed schedule like me.
Galentine’s Day AND Valentine’s Day are less than 2 weeks away! I don’t even know where the time went. This week, you’re getting two recipes out of me—my Red Bean and Strawberry Pinwheel Cookies and these Strawberry Mimosa Cupcakes. Double the holidays means double the sugar, and I’m not mad at that. Truth be told, The Fiancé and I don’t really celebrate Valentine’s Day. But when I spotted these super cute Wilton XOXO Mini Icing Decorations at Target, placed conveniently next to red, pink, and white jimmies, I totally caved.
Ah, it’s 5 days until Christmas! Can you believe it? Up until recently, Chicago had experience some unseasonably warm weather and, as crazy as this may be, it was throwing off my Christmas spirit! So, if you’re still scrambling to plan a dessert for Christmas Eve or Christmas Day, or you need a last minute treat to bring to the office, look no further than these Chocolate Peppermint Cupcakes! If you were a fan of my Triple Chocolate Peppermint Cookies, then you’ll love these cupcakes. These cupcakes are a breeze to make because of one key shortcut: cake mix! As you all know, I love shortcuts—but I love them even more during the holidays. Honestly, nobody will know and you’ll have a few extra minutes to kick up your feet and enjoy the holidays. Fall is upon us and I’m rolling up my sleeves so I can whip up some awesome fall recipes. First up are these Vanilla Apple Chai Cupcakes. I wanted to combine some of my favorite fall flavors, apples, apple cider, and chai lattes, into one perfect dessert. My go to fall drinks are soy chai lattes and apple cider (spiked and virgin) from mid-September to November. Whenever I incorporate chai flavors in my recipes, I always make my own chai mix instead of using pre-mixed tea leaves. I’ve found that making my own mix results in stronger, spicier flavors. I will warn you that there are a couple of extra steps in order to assemble these cupcakes, but they’re totally worth it. I promise. Chai is infused in the cupcakes and the frosting, so you won’t miss it. But the big surprise is the apple filling. These little guys will make you want to wrap yourself in a warm blanket with a hot chai latte in one hand a cupcake in the other.
You know that feeling when you’re craving something so badly that no other food can satisfy your hunger? No? Is that just me? Okay, moving on… Lately, I’ve been craving strawberry and pistachio combinations. These cupcakes get their pistachio flavor from Jello Pistachio Instant Pudding. The pudding gives the cupcakes a subtle green color which is all the more festive if you ask me. Cupcakes are already incredibly festive, but the green cupcakes and light pink strawberry meringue scream summer fun. I’m a sucker meringue frosting because it always looks like clouds have been piped onto the cupcakes. The addition of the strawberry jam to the frosting makes the meringue look like magical pink clouds. I definitely had a lick-the-spoon moment after I finished frosting these cupcakes…
