Last year I ate my weight in Pumpkin Apple Cinnamon Rolls and I had Carrot Cake Cinnamon Rolls for days and days. I love cinnamon rolls. I have yet to meet a single person who dislikes cinnamon rolls and I would probably faint in shock if I ever did. Since Easter brunch is right around the corner, I decided to make Spring-inspired cinnamon rolls: Blood Orange Ricotta Sweet Rolls.

Moros, a blood orange varietal, are in season through March so you should go out and buy all of them. You can use them in salads, appetizers, grilled dishes, mimosas, and these Blood Orange Ricotta Sweet Rolls. The bright, intensity of the blood oranges shine against the rich, warm flavors of the sweet roll and ricotta sugar filling. And when topped with the sweet citrus icing, you’ll be in heaven with every bite. But if you want to take these sweet rolls a step further, sprinkle some almond slices over the tops for an extra crunch. The only reason why I didn’t use almonds when I made this recipe is because The Fiancé is crazy allergic to nuts. If you live in a nut allergy-free household, please enjoy the almonds for me. I really miss them.

Not only are these sweet rolls delicious and easy to make, but they’re easy on the eyes—especially when they’re made in my lovely new pale yellow Le Creuset Square Baking Dish. Ingredients

    Sweet Rolls
  • 3 1/4 cups All-purpose Flour, divided
  • 2 1/4 teaspoons Active Dry Yeast
  • 3/4 cup Whole Milk
  • 2 tablespoons Granulated Sugar
  • 10 tablespoons Unsalted Butter, cubed
  • 1/2 teaspoon Kosher Salt
  • 2 large Eggs, beaten
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Ground Cardamom
  • 3 teaspoons Blood Orange Zest
  • Filling
  • 1/4 cup Granulated Sugar
  • 1 1/2 teaspoons Ground Cinnamon
  • 1/2 teaspoon Ground Cardamom
  • 6 tablespoons Unsalted Butter
  • 1/3 cup Whole Milk Ricotta
  • Blood Orange Ricotta Glaze
  • 3 oz. Cream Cheese, room temperature
  • 1/2 cup Whole Ricotta Cheese
  • 4 tablespoons Unsalted Butter, room temperature
  • 1 teaspoon Blood Orange Zest
  • 1/4 cup and 2 tablespoons Blood Orange Juice
  • 3 cups Powdered Sugar
  • pinch of salt
  • 1 cup Sliced Almonds

Instructions

    Sweet Rolls and Filling
  1. In the bowl of a stand mixer, stir together 1 1/2 cups flour and yeast, set aside.
  2. In a medium saucepan, whisk together blood orange zest, milk, sugar, salt, and four tablespoons of butter. Heat on medium low heat, being careful not to boil, until very warm (about 120-130 degrees) - the butter will be almost melted and should be very hot, but not burning, to the touch.
  3. Pour milk mixture and the beaten eggs over the flour in the stand mixer fitted with a dough hook. Mix on medium speed until mixture is wet.
  4. Gradually add remaining 1 3/4 cup flour while mixer is on medium speed. Add an additional 1/4 cup flour if needed, the dough should be pulling away from the sides and the bowl should be almost clean. Keep the mixer on medium speed and knead for 8 minutes.
  5. Turn dough out into a greased bowl, cover, and let rise for one hour or until doubled. Punch dough down and roll out onto a floured surface into a large rectangle, about 11 x 11 inches.
  6. In a small bowl, mix together the sugar, cinnamon, and cardamom until fully mixed together.
  7. Place the butter and ricotta into a bowl and microwave for 30 seconds and a mix, then heat for another 30 seconds and mix until smooth. Spread the ricotta mixture evenly over the dough.
  8. Sprinkle the sugar mixture evenly over the ricotta.
  9. Preheat the oven to 375 degrees.
  10. Roll up starting with the long side as tightly as possible and slice into 16 slices. Place slices cut side down in a 9 3/4" x 9 3/4" baking pan and allow to rise 30 minutes, covered.
  11. Bake at 375 for 20 minutes until golden brown.
  12. Cool completely on a wire rack.
  13. Blood Orange Ricotta Glaze and Assembly
  14. Cream the cream cheese, ricotta, butter, and zest together in a stand mixer until light and fluffy.
  15. Add the powdered sugar and salt and mix until fully incorporated.
  16. Add the blood orange juice and and mix until fully incorporated.
  17. Drizzle the glaze over the sweet rolls after they've cooled.
  18. (Optional) Sprinkle slivered almonds over the tops of the sweet rolls and enjoy.
