I’ll never get tired of key lime. Never. As summer kicks into high gear, I start to gravitate towards fruity desserts like these Blackberry Key Lime Ricotta Bars. My Strawberry Lemon Ricotta Bars are always such a hit, so wanted to create a summer-y, key lime twist on that recipe. I love key lime and berries together and I can’t resist a dessert that combines both flavors. These Blackberry Key Lime Ricotta Bars have a gorgeous swirl, packed with flavor, which means no extra decorating required, and there are plenty of squares to go around. So it goes without saying, that this recipe is perfect for potlucks and entertaining.

Ingredients

    Lime Shortbread Crust
  • 1 3/4 cups Unbleached All-purpose Flour
  • 2/3 cup Confectioners' Sugar
  • 1/4 cup Cornstarch
  • 1 tablespoon Lime Zest
  • 3/4 teaspoon Kosher Salt
  • 12 tablespoons unsalted butter (1 1/2 sticks), cut into 1-inch pieces, slightly softened plus extra for greasing pan
  • Blackberry Swirl
  • 2 cups fresh Blackberries
  • 1/4 cup Granulated Sugar
  • 1/4 cup Lime Juice
  • 1/4 cup Water
  • 2 teaspoons Cornstarch
  • Key Lime Filling
  • 8oz (1 cup) Fresh Whole Milk Ricotta, drained
  • 4 large room temperature Eggs, beaten
  • 1 1/3 cups Granulated Sugar
  • 1/4 cup and 1 tablespoon of Unbleached All-purpose Flour
  • 1 1/2 tablespoons Cornstarch
  • 1 1/2 tablespoons Lime Zest
  • 1/3 fresh Lime Juice
  • 1 cup Lime Curd
  • 1/4 teaspoon Salt

Instructions

    Lime Shortbread Crust
  1. Adjust oven rack to middle position and heat oven to 350 degrees.
  2. Using a pastry brush, lightly butter a 13-by-9-inch baking dish and line with one sheet parchment paper. Butter paper, then lay second sheet crosswise over it.
  3. Pulse flour, confectioner's sugar, cornstarch, lime zest and salt in food processor. Add butter and process to blend; then pulse until mixture is pale yellow and resembles coarse meal. You can also use a pastry blender if you don't have a food processor (it's a great arm workout).
  4. Sprinkle mixture into lined pan and, press firmly with fingers into even layer over entire pan bottom and about 1/2-inch up sides. Refrigerate for 30 minutes
  5. Bake until light golden brown, about 20 minutes. Set aside to cool.
  6. Blackberry Swirl
  7. Add the blackberries, sugar, lime juice, water, and cornstarch to a small saucepan and bring to a simmer over medium heat.
  8. Slowly start to mash the blackberries as you stir the mixture.
  9. Once the blackberry mixture starts to thicken and the blackberries have broken down (about 15-20 minutes), remove the pan from the heat and strain into a bowl to cool.
  10. Key Lime Ricotta Filling
  11. Whisk ricotta, eggs, sugar, flour, and cornstarch in medium bowl, then stir in lime zest, juice, lime curd, and salt to blend well. Reduce oven temperature to 325 degrees.
  12. Stir filling mixture before pouring into warm crust.
  13. Add the strained blackberry mixture by the spoonful over the key lime mixture, one drop at a time.
  14. Drag a toothpick through the entire filling in a zig-zag pattern, lengthwise.
  15. Bake until filling feels firm when touched lightly, about 33-35 minutes. Transfer pan to wire rack; cool to room temperature, at least 2 hours.
  16. Transfer to cutting board, fold paper down, and cut into bars, wiping knife or pizza cutter clean between cuts.
  17. Dust with confectioner's sugar and garnish with fresh berries just before serving.
