Every now and then, I need a shortcut in the kitchen—who doesn’t? That’s where these Blackberry Brie Pastry Squares come into play. With all the baking that I do, sometimes I want a quick and easy recipe for my morning pastries.

The key component to these lightning fast pastry squares: Pillsbury Crescent Seamless Dough Sheet. Normally I would make my own pastry dough, but when you’ve only got 30 minutes to spare, the Pillsbury dough sheets are a godsend. The trick to using this ready-made ingredient while keeping a gourmet taste: a really good filling. These little guys are filled with a semi-sweet blackberry compote that pairs perfectly with the melted brie. The drizzled honey on top just seals the deal. You may want to double the recipe because these Blackberry Brie Pastry Squares will go fast!

Ingredients

  • Ingredients
  • 1 cup fresh Blackberries
  • 2 tbsp Water
  • 1 tsp fresh squeezed Lemon Zest
  • 2 tbsp Honey
  • 5 oz. Brie, cubed
  • 1 roll of Pillsbury All-Butter Pastry Sheet
  • 1/4 cup Honey for drizzle

Instructions

  1. Preheat the oven to 375°. Line one baking sheet with parchment paper.
  2. Add the blackberries, water, lemon zest, and honey to a small sauce pan and bring to a boil. Stir consistently.
  3. Once the ingredients come to a boil, reduce to a simmer until the consistency tightens to a thicker consistency. Stir consistently. This is a perfect time to taste the reduction. If you'd like a sweeter flavor, add some more honey to taste.
  4. Make sure your Pillsbury dough is very cold and roll it out your lined baking sheet. Cut the sheet into 8 even squares.
  5. Place 3-4 cubes of brie, and a spoonful of the blackberry reduction in the middle of the pastry square.
  6. Fold up opposite corners of each square until you're holding all four corners. Pinch the corners together (you can twist them together if you find that holds better). Repeat for each square.
  7. Place the baking sheet in the middle of the oven and bake for 10-12 minutes until the edges are golden brown. Let the pastries cool on a wire rack for 10-15 minutes.
  8. Drizzle honey over the tops of the pastries and enjoy warm!
